Ingredients
  

  • 4 cups fresh arugula packed
  • 1 can chunk light tuna 5 oz, drained
  • 1 ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 medium red onion thinly sliced
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Method
 

  1. Wash the arugula thoroughly and pat it dry.
  2. Drain the canned tuna and flake it apart with a fork.
  3. Halve the avocado, remove the pit, scoop out the flesh, and dice into bite-sized pieces.
  4. In a large bowl, combine arugula, flaked tuna, diced avocado, halved cherry tomatoes, and sliced red onion.
  5. Whisk together lemon juice and olive oil in a small bowl; drizzle over the salad and toss gently to coat.
  6. Serve immediately on plates or in a large bowl. Season with salt and pepper before serving.
