Asparagus Pasta

Ingredients
  

Pasta
  • 12 oz spaghetti
Vegetables
  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 3 cloves garlic minced
  • 1 medium lemon zested and juiced
Fats
  • 3 tbsp olive oil
Seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/4 cup parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare the Asparagus
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the asparagus pieces and sauté for 5-7 minutes until tender but still crisp.
Combine and Serve
  1. Add the cooked spaghetti to the skillet with asparagus. Pour in the lemon juice and zest, and toss to combine. If the pasta seems dry, add some reserved pasta water until desired consistency is reached.
  2. Season with salt and black pepper to taste. Serve hot, topped with grated parmesan cheese.
