Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 2 cloves garlic peeled
  • 1/4 cup pine nuts toasted
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Make the Pesto
  1. In a food processor, combine the basil leaves, garlic, and pine nuts. Pulse until finely chopped.
  2. With the processor running, slowly add the olive oil until the mixture is smooth.
  3. Add the grated Parmesan cheese, salt, and pepper. Pulse again until combined.
  4. Taste and adjust seasoning if necessary.

Notes

Pesto can be stored in an airtight container in the refrigerator for up to a week. To prevent browning, drizzle a thin layer of olive oil on top before sealing.
