Ingredients
  

Base
  • 4 large bell peppers sliced in half and seeds removed
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 medium jalapeño sliced
  • 1 medium tomato diced
  • 1/4 cup green onions sliced
  • 1/4 cup sour cream for serving
  • 1/4 cup fresh cilantro chopped, for garnish

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 400°F (200°C). Cut the bell peppers in half lengthwise and remove the seeds.
Assemble the Nachos
  1. Place the bell pepper halves on a baking sheet, cut side up. Layer black beans, corn, jalapeños, and shredded cheese on top of each pepper half.
Bake
  1. Bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and top with diced tomatoes, green onions, sour cream, and cilantro. Serve immediately.
