Ingredients
  

Base
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Filling
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar

Method
 

Prepare the Base
  1. Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a mixing bowl, combine flour, oats, brown sugar, granulated sugar, melted butter, vanilla extract, baking powder, and salt. Mix until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking pan to form the base.
Prepare the Filling
  1. In another bowl, combine blueberries, lemon juice, cornstarch, and granulated sugar. Toss gently to coat the blueberries.
  2. Spread the blueberry mixture evenly over the base in the baking pan.
Bake the Bars
  1. Crumble the remaining base mixture over the blueberry layer.
  2. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  3. Allow to cool completely before cutting into bars.
