Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk can use almond milk for a dairy-free option
  • 1 large egg
  • 2 tbsp melted butter plus extra for cooking
Add-ins
  • 1 cup fresh blueberries can substitute with frozen

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
Cook the Pancakes
  1. Preheat a griddle or non-stick skillet over medium heat and lightly grease with butter.
  2. Pour 1/4 cup of batter for each pancake onto the griddle.
  3. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about 2 more minutes.
Serve
  1. Serve warm with maple syrup, additional blueberries, or your favorite toppings.

Notes

For fluffier pancakes, do not overmix the batter. Let it rest for a few minutes before cooking.
