Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
For the Bourbon Glaze
  • 1/2 cup bourbon or whiskey
  • 1/4 cup brown sugar packed
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste

Method
 

Prepare the Glaze
  1. In a saucepan, combine bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, minced garlic, black pepper, and salt. Bring to a simmer over medium heat.
  2. Reduce heat and let the glaze simmer for about 10 minutes, or until slightly thickened. Remove from heat and set aside.
Cook the Salmon
  1. Preheat the grill or oven to medium-high heat.
  2. Place the salmon fillets on a grill or baking sheet. Brush generously with the bourbon glaze.
  3. Cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork and is cooked through.
  4. During the last few minutes of cooking, brush the salmon with additional glaze for extra flavor.
Serve
  1. Remove the salmon from the grill or oven and let it rest for a few minutes.
  2. Serve with your choice of sides, drizzling any remaining glaze over the top.

Notes

For a smoky flavor, consider using a cedar plank on the grill. Adjust the sweetness of the glaze by varying the amount of brown sugar.
