Prepare the Glaze
- In a saucepan, combine bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, minced garlic, black pepper, and salt. Bring to a simmer over medium heat.
- Reduce heat and let the glaze simmer for about 10 minutes, or until slightly thickened. Remove from heat and set aside.
Cook the Salmon
- Preheat the grill or oven to medium-high heat.
- Place the salmon fillets on a grill or baking sheet. Brush generously with the bourbon glaze.
- Cook for about 6-8 minutes on each side, or until the salmon flakes easily with a fork and is cooked through.
- During the last few minutes of cooking, brush the salmon with additional glaze for extra flavor.
Serve
- Remove the salmon from the grill or oven and let it rest for a few minutes.
- Serve with your choice of sides, drizzling any remaining glaze over the top.

Notes
For a smoky flavor, consider using a cedar plank on the grill. Adjust the sweetness of the glaze by varying the amount of brown sugar.
