Ingredients
  

Salad Base
  • 1 head cauliflower cut into small florets
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the cauliflower florets, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
