Ingredients
  

Chicken and Marinade
  • 2 pounds chicken thighs bone-in, skin-on preferred
  • 1/2 cup soy sauce low sodium recommended
  • 1/2 cup white vinegar
  • 1 tablespoon garlic minced
  • 1 teaspoon black peppercorns
  • 1 cup water
For Serving
  • 2 cups steamed rice for serving

Method
 

Marinate the Chicken
  1. In a bowl, combine soy sauce, vinegar, minced garlic, and black peppercorns. Add chicken thighs and marinate for at least 30 minutes.
Cook the Chicken
  1. In a large pot, add the marinated chicken along with the marinade, water, and laurel leaves. Bring to a boil over medium heat.
  2. Reduce heat to low, cover, and simmer for 30-40 minutes until the chicken is tender.
  3. Remove the lid and cook for an additional 10 minutes to reduce the sauce.
Serve
  1. Serve the chicken adobo hot over steamed rice, spooning the sauce over the top.

Notes

For a richer flavor, you can add a tablespoon of brown sugar to the marinade.
