Ingredients
  

Chicken Salad
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup mayonnaise Adjust to taste.
  • 1 cup celery, diced Adds crunch.
  • 1/2 cup red grapes, halved Optional for sweetness.
  • 1/4 cup almonds, sliced Optional for crunch.
  • 1 teaspoon dijon mustard For flavor.
  • 1 teaspoon lemon juice Freshly squeezed.
  • 1/2 teaspoon salt To taste.
  • 1/4 teaspoon black pepper To taste.
Croissants
  • 4 pieces croissants Freshly baked or store-bought.
Optional Toppings
  • 4 leaves romaine lettuce For added freshness.
  • 1 tomato sliced For added flavor.

Method
 

Prepare the Chicken Salad
  1. In a mixing bowl, combine the shredded chicken, mayonnaise, diced celery, halved grapes, sliced almonds, dijon mustard, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly coated.
Assemble the Sandwich
  1. Slice the croissants in half horizontally. Spoon a generous amount of chicken salad onto the bottom half of each croissant.
  2. If desired, add a leaf of romaine lettuce and a slice of tomato on top of the chicken salad.
  3. Place the top half of the croissant over the filling and press gently to secure.
Serve
