Ingredients
  

Chicken Salad
  • 2 cups Cooked Chicken Shredded or diced
  • 1/2 cup Mayonnaise Or Greek yogurt for a lighter option
  • 1 cup Celery Chopped
  • 1/2 cup Red Grapes Halved
  • 1/4 cup Red Onion Finely chopped
  • 1 teaspoon Dijon Mustard
Sandwich Assembly
  • 8 slices Bread Whole grain or your choice
  • 4 leaves Lettuce For garnish

Method
 

Prepare Chicken Salad
  1. In a mixing bowl, combine the cooked chicken, mayonnaise, celery, grapes, red onion, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly coated.
  2. Taste and adjust seasoning if necessary.
Assemble Sandwiches
  1. Lay out the slices of bread on a clean surface.
  2. Spread a generous amount of the chicken salad mixture onto half of the bread slices.
  3. Top with lettuce leaves and cover with the remaining slices of bread.
  4. Cut sandwiches in half and serve immediately.
