Ingredients
  

Chicken Marinade
  • 1 lb chicken breast cut into strips
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp lime juice
  • 1 tsp curry powder
Peanut Sauce
  • 1 cup peanut butter smooth
  • 1/4 cup soy sauce
  • 1/4 cup coconut milk
  • 2 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp sriracha optional for heat
  • 1 clove garlic minced
Garnish
  • 1/4 cup chopped peanuts for topping
  • 2 tbsp cilantro chopped
  • 1 lime cut into wedges

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine soy sauce, vegetable oil, brown sugar, minced garlic, grated ginger, lime juice, and curry powder. Mix well.
Marinate the Chicken
  1. Add the chicken strips to the marinade and let it sit for at least 30 minutes.
Prepare the Peanut Sauce
  1. In another bowl, whisk together peanut butter, soy sauce, coconut milk, brown sugar, lime juice, sriracha, and minced garlic until smooth.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers and grill for about 5-7 minutes on each side, or until fully cooked.
Serve
  1. Serve the grilled chicken skewers with peanut sauce on the side. Garnish with chopped peanuts, cilantro, and lime wedges.

Notes

For best flavor, marinate the chicken overnight. Adjust the spiciness of the peanut sauce by adding more or less sriracha.
