Ingredients
  

For the Cinnamon Apple Oatmeal
  • 2 cups old-fashioned rolled oats not instant oats
  • 2 medium Honeycrisp apples peeled and diced into 1/2-inch pieces
  • 1/2 cup chopped pecans divided
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg freshly grated preferred
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 3/4 cups whole milk or unsweetened almond milk
  • 1/3 cup pure maple syrup Grade A amber
  • 2 large eggs room temperature
  • 3 tbsp unsalted butter melted and slightly cooled
  • 1 tsp pure vanilla extract
For the Warm Maple Drizzle Glaze
  • 1/2 cup powdered confectioners sugar sifted
  • 2 tbsp pure maple syrup
  • 1 tbsp whole milk or cream to thin
  • 1/4 tsp ground cinnamon

Method
 

Prepping the Dish & Dry Blend
  1. Preheat oven to 375°F (190°C). Grease an 8x8-inch or 2-quart ceramic baking dish lightly with butter or nonstick spray.
  2. In a large mixing bowl, whisk together rolled oats, ground cinnamon, ground nutmeg, baking powder, sea salt, and half of the chopped pecans until evenly blended.
Whisking Liquids & Combining
  1. In a separate medium bowl, whisk together the milk, pure maple syrup, eggs, melted butter, and vanilla extract until fully incorporated.
  2. Fold the diced Honeycrisp apples into the dry oat mixture. Pour the milk mixture over top and stir gently until all oats are moistened and evenly distributed.
Baking & Glazing
  1. Spread the oatmeal mixture evenly into the prepared ceramic baking dish. Scatter the remaining chopped pecans across the top.
  2. Bake for 35 to 40 minutes, until the top is golden-brown, the edges are lightly caramelized, and the center is comfortably set.
  3. While baking, whisk together powdered sugar, maple syrup, milk, and cinnamon in a small bowl until a silky drizzle forms.
  4. Let the baked oatmeal cool for 5 minutes, then drizzle the sweet maple glaze generously over the warm crust. Slice into warm squares and serve immediately.
