Ingredients
  

Dressing
  • 1/3 cup avocado oil
  • 1/3 cup seasoned rice vinegar
  • 1 medium lime (juiced)
  • 3 cloves garlic (minced)
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 1/4 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle pepper
Vegetables and Beans
  • 2/3 cup red onion (finely diced)
  • 1 1/2 cups bell peppers (diced, any color)
  • 1/3 cup jarred roasted red peppers (diced)
  • 1/3 cup pickled jalapeño peppers
  • 1 15 ounce can black beans (drained and rinsed)
  • 1 15 ounce can black-eyed peas (drained and rinsed)
  • 2 cups frozen corn
  • 1 cup fresh tomato (diced)
  • 1/2 cup fresh cilantro (chopped)
For Serving
  • tortilla chips (scoop style for serving)

Method
 

Preparation
  1. In a large bowl, whisk together avocado oil, seasoned rice vinegar, lime juice, minced garlic, garlic powder, salt, white sugar, ground cumin, smoked paprika, and chipotle pepper.
  2. Add the red onion, bell peppers, roasted red peppers, pickled jalapeño peppers, black beans, black-eyed peas, frozen corn, diced tomato, and chopped cilantro to the bowl. Mix well.
  3. Cover and refrigerate for at least 120 minutes before serving.
  4. Serve with tortilla chips.
