Ingredients

For the Whipped Sweet Potato Base
  • 3 lbs sweet potatoes baked tender and flesh scooped, about 3-4 large
  • 1/4 cup dark brown sugar packed
  • 1/4 cup pure maple syrup Grade A amber
  • 1/3 cup heavy whipping cream or whole milk
  • 4 tbsp unsalted butter melted
  • 2 large eggs room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg freshly grated preferred
  • 1/2 tsp fine sea salt
For the Crunchy Brown Sugar Pecan Streusel
  • 1 cup pecan halves and pieces roughly chopped
  • 1/2 cup dark brown sugar packed
  • 1/3 cup all-purpose flour or 1:1 gluten-free flour
  • 4 tbsp unsalted butter cold, cut into 1/2-inch cubes
  • 1/2 tsp ground cinnamon
  • 1/4 tsp flaky sea salt

Method

Whipping the Sweet Potato Base
  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch or 2.5-quart ceramic baking dish lightly with butter.
  2. In a large mixing bowl, beat the warm baked sweet potato flesh with an electric hand mixer or stand mixer for 1 minute until smooth.
  3. Add dark brown sugar, maple syrup, heavy cream, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and sea salt. Beat on medium speed for 2 minutes until silky, light, and thoroughly whipped.
  4. Spread the whipped sweet potato mixture evenly into the prepared ceramic baking dish, smoothing the top with a spatula.
Crafting the Pecan Streusel
  1. In a medium mixing bowl, whisk together chopped pecans, dark brown sugar, all-purpose flour, ground cinnamon, and flaky sea salt.
  2. Add the cold cubed butter. Work the butter into the dry pecan mixture using a pastry cutter, fork, or clean fingertips until pea-sized, crumbly streusel clumps form.
  3. Scatter the pecan streusel evenly across the whipped sweet potato base, covering the surface completely from edge to edge.
Baking to Golden Perfection
  1. Bake uncovered at 375°F (190°C) for 32 to 35 minutes, until the filling is puffed and gently set, and the pecan topping is fragrant, deeply golden-brown, and caramelized around the edges.
  2. Remove from oven and let rest for 10 minutes on a wire rack before serving so the spiced custard sets cleanly.
  3. Slice into warm squares and serve as an irresistible holiday side or decadent autumn dessert.
