  • 1/4 cup pineapple juice
  • 2 cloves garlic minced
  • 2 cups shredded cabbage
  • 1/4 cup green onions
  • 1/2 cup mayonnaise
  • 2 tablespoons rice vinegar
  • 4 pieces Hawaiian rolls toasted
  • 4 slices sliced pineapple grilled
  • 4 slices sliced cheese optional

Method
 

  1. Marinate the chicken breasts in soy sauce, pineapple juice, and minced garlic for at least 30 minutes.
  2. Grill the chicken until fully cooked, about 15 minutes.
  3. While the chicken is cooking, prepare the slaw by mixing shredded cabbage with green onions, mayonnaise, and rice vinegar.
  4. Toast the Hawaiian rolls on the grill or in a toaster.
  5. Assemble the sandwich by placing grilled chicken on the toasted roll, topping with sliced pineapple and slaw. Add cheese if desired.
