- Heat olive oil in a large skillet over medium heat.
- Season salmon fillets with salt and pepper, then add to the skillet, cooking until golden and cooked through, about 6-7 minutes per side.
- Remove salmon and set aside.
- In the same skillet, melt butter. Add minced garlic and sauté until fragrant.
- Add cherry tomatoes and spinach, stirring until the spinach wilts.
- Pour in the heavy cream and bring to a simmer.
- Stir in grated Parmesan and chopped herbs. Season with salt and pepper to taste.
- Return the cooked salmon to the skillet, spooning the sauce over the top.
- Serve immediately with lemon wedges if desired.
