Ingredients
  

Chicken Salad Base
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup celery, diced
  • 1 cup grapes, halved Red or green grapes work well.
  • 1/2 cup red onion, diced Adjust to taste.
Dressing
  • 1/2 cup Greek yogurt Can substitute with mayonnaise.
  • 2 tablespoons fresh dill, chopped Use more for a stronger flavor.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground is recommended.

Method
 

Prepare the Chicken Salad
  1. In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, and diced red onion.
  2. In a separate bowl, whisk together the Greek yogurt, chopped dill, lemon juice, salt, and black pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until everything is well coated.
  4. Taste and adjust seasoning if necessary.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
  2. Serve on a bed of greens, in a sandwich, or with crackers.
