Strawberry Topping
  • 2 cups fresh strawberries sliced
  • 2 tablespoons sugar for macerating
Shortcake
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus extra for brushing
  • 1 teaspoon vanilla extract
Whipped Cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare Strawberry Topping
  1. In a bowl, combine sliced strawberries and sugar. Toss to coat and let sit for 15 minutes to macerate.
Make Shortcake
  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Stir in heavy cream and vanilla extract until just combined.
  5. Turn dough onto a floured surface and knead gently. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet. Brush tops with extra cream.
  7. Bake for 15-20 minutes or until golden brown.
Prepare Whipped Cream
  1. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble Shortcake
  1. Split shortcakes in half, layer with strawberries and whipped cream, and top with the other half.
