Ingredients
  

Beef Filling
  • 1 lb Ground beef You can substitute with ground turkey or chicken.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 cup Olives Chopped, green or black.
  • 1 cup Hard-boiled eggs Chopped.
Chicken Filling
  • 1 lb Shredded cooked chicken
  • 1 medium Onion Chopped.
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 cup Corn Canned or frozen.
  • 1 cup Cheddar cheese Shredded.
Vegetarian Filling
  • 1 cup Black beans Canned, rinsed and drained.
  • 1 medium Bell pepper Chopped.
  • 1 medium Onion Chopped.
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 cup Corn Canned or frozen.

Method
 

Beef Filling
  1. In a skillet, heat oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add ground beef, cumin, paprika, salt, and pepper. Cook until beef is browned.
  3. Stir in olives and hard-boiled eggs. Remove from heat and let cool.
Chicken Filling
  1. In a skillet, heat oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add shredded chicken, cumin, chili powder, salt, and pepper. Mix well.
  3. Stir in corn and cheddar cheese. Remove from heat and let cool.
Vegetarian Filling
  1. In a skillet, heat oil over medium heat. Add chopped onion and bell pepper, sauté until soft.
  2. Add black beans, corn, cumin, chili powder, salt, and pepper. Cook for a few minutes.
  3. Remove from heat and let cool.
