Ingredients
  

Beef Filling
  • 1 lb ground beef or ground turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup green olives sliced
  • 1 egg hard-boiled chopped
  • to taste salt
  • to taste black pepper
Chicken Filling
  • 1 lb cooked chicken shredded
  • 1 medium onion finely chopped
  • 1 bell pepper red finely chopped
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 cup corn cooked
  • to taste salt
  • to taste black pepper
Vegetarian Filling
  • 1 cup black beans cooked
  • 1 cup corn cooked
  • 1 medium onion finely chopped
  • 1 bell pepper green finely chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt
  • to taste black pepper

Method
 

Beef Filling
  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in cumin, paprika, olives, and hard-boiled egg. Season with salt and pepper.
  4. Remove from heat and let cool before using.
Chicken Filling
  1. In a skillet, sauté onion and bell pepper until softened.
  2. Add shredded chicken, oregano, cumin, corn, salt, and pepper. Mix well.
  3. Cook for a few minutes until heated through.
  4. Remove from heat and let cool before using.
Vegetarian Filling
  1. In a mixing bowl, combine black beans, corn, onion, bell pepper, cumin, and chili powder.
  2. Season with salt and pepper to taste.
  3. Mix well and let sit for flavors to meld.
