Ingredients
  

Filling
  • 2 cups cooked chicken, shredded
  • 1 cup cheese, shredded (such as Monterey Jack)
  • 1 cup onion, diced for flavor
Sauce
  • 4 tomatillos husked and chopped
  • 1 jalapeño seeded and chopped adjust for spice level
  • 1 cup cilantro fresh
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon lime juice
  • 1 teaspoon salt
Tortillas
  • 8 pieces corn tortillas
Topping
  • 1 cup cheese, shredded (such as Queso Fresco)
  • 1 cup sour cream for serving

Method
 

Prepare the Sauce
  1. In a blender, combine tomatillos, jalapeño, cilantro, sour cream, chicken broth, lime juice, and salt. Blend until smooth.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C). In a skillet, heat the tortillas until warm. Fill each tortilla with shredded chicken, diced onion, and shredded cheese. Roll them up and place them seam-side down in a baking dish.
Bake
  1. Pour the blended sauce over the enchiladas and sprinkle with additional cheese. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool slightly. Serve with a dollop of sour cream on top.
