Ingredients
  

Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 2 tbsp sriracha adjust to taste
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch for thickening
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
  • 2 cloves garlic minced
  • 1 inch ginger grated
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds

Method
 

Prepare the Sauce
  1. In a mixing bowl, combine soy sauce, honey, rice vinegar, sriracha, sesame oil, and cornstarch. Whisk until smooth.
Cook the Chicken
  1. Heat a skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables
  1. Add bell pepper, broccoli, carrots, garlic, and ginger to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
Combine and Serve
  1. Pour the sauce over the chicken and vegetables. Stir well to coat and cook for an additional 2-3 minutes until the sauce thickens.
  2. Serve hot, garnished with green onions and sesame seeds.
