Horchata

A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for hot days.

Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 4 cups water for soaking
  • 2 cups milk can use almond or coconut milk for a dairy-free version
  • 1 cup sugar adjust to taste
  • 1 tbsp cinnamon plus extra for garnish
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

Prepare the Rice
  1. In a large bowl, combine the rinsed rice and water. Let it soak for at least 3 hours or overnight.
Blend the Mixture
  1. Drain the rice and place it in a blender with 4 cups of fresh water. Blend until the rice is finely ground.
Strain the Liquid
  1. Strain the blended mixture through a fine mesh strainer or cheesecloth into a pitcher, discarding the solids.
Add Remaining Ingredients
  1. To the strained liquid, add the milk, sugar, cinnamon, vanilla extract, and salt. Stir well until the sugar is dissolved.
Chill and Serve
  1. Refrigerate for at least 1 hour before serving. Serve over ice and garnish with a sprinkle of cinnamon.

Notes

Horchata can be stored in the refrigerator for up to 5 days. Stir before serving as ingredients may settle.
