Ingredients
  

  • 1 lb raw shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 2 tbsp freshly squeezed lime juice
  • ½ small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Method
 

  1. Thaw shrimp if frozen and pat dry.
  2. In a skillet over medium heat, heat olive oil and cook shrimp until pink and opaque (about 3-5 minutes).
  3. While shrimp cools, chop mango and avocado into bite-sized pieces; slice the red onion.
  4. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
  5. In a large mixing bowl, combine shrimp, mangoes, avocados, red onion slices, and cilantro. Drizzle with dressing and toss gently.
  6. Serve immediately on plates or in bowls; garnish with extra cilantro or lime wedges.
