Ingredients
  

Rice and Beans
  • 1 cup brown rice uncooked
  • 1 can black beans drained and rinsed
  • 2 cups vegetable broth
Vegetables
  • 1 cup corn frozen or fresh
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper diced
  • 1 cup red onion diced
Toppings
  • 1 avocado sliced
  • 1/2 cup salsa your choice
  • 1/4 cup cilantro chopped
  • 1 lime juiced

Method
 

Prepare Rice and Beans
  1. In a medium pot, combine brown rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is tender.
  2. Once cooked, fluff the rice with a fork and stir in the black beans.
Cook Vegetables
  1. In a skillet, sauté the red onion and bell pepper over medium heat for about 5 minutes until softened.
  2. Add corn and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
Assemble the Bowl
  1. In each serving bowl, layer the rice and bean mixture, followed by the sautéed vegetables.
  2. Top with sliced avocado, salsa, chopped cilantro, and a squeeze of lime juice.
