Ingredients
  

Base
  • 2 cups Cooked brown rice
  • 1 cup Black beans canned, drained and rinsed
Toppings
  • 1 cup Corn canned or frozen
  • 1 cup Cherry tomatoes halved
  • 1 cup Avocado diced
  • 1 cup Shredded lettuce
  • 1/2 cup Sour cream or Greek yogurt
  • 1/2 cup Shredded cheese cheddar or Mexican blend
  • 1 tablespoon Fresh cilantro chopped
Seasoning
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Black pepper to taste

Method
 

Prepare the base
  1. In a large skillet, combine the cooked brown rice and black beans over medium heat. Stir in cumin, chili powder, garlic powder, salt, and pepper. Cook for about 5-7 minutes until heated through.
Assemble the bowl
  1. In serving bowls, layer the rice and bean mixture as the base.
  2. Top with corn, cherry tomatoes, avocado, shredded lettuce, sour cream, shredded cheese, and cilantro.
