Ingredients

Pasta
  • 12 oz spaghetti
Sauce
  • 1/2 cup extra virgin olive oil high quality
  • 4 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup fresh parsley chopped
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

Method

Cooking Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Making the Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant, about 1-2 minutes.
  2. Add the drained pasta to the skillet, tossing to coat in the oil and garlic mixture. If the pasta seems dry, add reserved pasta water a little at a time.
  3. Stir in the chopped parsley, salt, and black pepper. Toss well to combine.
Serving
  1. Serve immediately, garnished with additional parsley and grated Parmesan if desired.
