  • 1 pie crust (9-inch) frozen pie crust
  • 2 cups sliced onions caramelized
  • 1 cup low-fat cottage cheese
  • 3 large eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh thyme or parsley chopped

Method
 

  1. Preheat your oven to 375°F (190°C). Place the frozen pie crust in a pie pan.
  2. In a skillet over medium heat, add a splash of olive oil and sauté onions until golden brown and caramelized (15-20 minutes).
  3. In a bowl, mix together cottage cheese, eggs, salt, pepper, and herbs until smooth.
  4. Fold the caramelized onions into the cheese mixture gently.
  5. Pour the mixture into the prepared pie crust evenly.
  6. Bake for 30-35 minutes until golden brown on top. Serve warm or cold.
