Ingredients
  

Breakfast Quinoa Bowl
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup almond milk or any milk of choice
  • 1 tbsp maple syrup optional
  • 1 cup mixed berries fresh or frozen
  • 1 tbsp chia seeds for added fiber
Lentil Soup
  • 1 tbsp olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup green lentils rinsed
  • 6 cups vegetable broth
  • 1 tbsp thyme dried
  • 1 tsp cumin
  • 1 cup spinach fresh
Baked Salmon with Veggies
  • 4 oz salmon fillets
  • 2 cups broccoli chopped
  • 1 cup bell pepper sliced
  • 2 tbsp olive oil
  • 1 tsp lemon juice fresh
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper

Method
 

Breakfast Quinoa Bowl
  1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. In a bowl, mix cooked quinoa with almond milk, maple syrup, berries, and chia seeds. Serve warm.
Lentil Soup
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add carrots and celery, cook for 5 minutes. Stir in lentils, broth, thyme, cumin, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender. Stir in spinach before serving.
Baked Salmon with Veggies
  1. Preheat oven to 400°F (200°C). Place salmon and veggies on a baking sheet.
  2. Drizzle with olive oil, lemon juice, garlic powder, salt, and pepper. Toss to coat.
  3. Bake for 20-25 minutes until salmon is cooked through and veggies are tender.
