Layering & Slow Cooking
- Place whole raw chicken breasts evenly at the bottom of a 6-quart slow cooker. Scatter diced yellow onion, minced garlic, rinsed cannellini beans, sweet corn, and diced green chiles over and around the chicken.
- In a small bowl, whisk together ground cumin, chili powder, Mexican oregano, garlic powder, onion powder, sea salt, and black pepper. Sprinkle the seasoning mix evenly over all ingredients in the slow cooker, then pour in 4 cups of low-sodium chicken bone broth.
- Cover with the lid and cook on LOW for 6 to 7 hours, or on HIGH for 3.5 to 4 hours, until the chicken breasts are exceptionally tender and register 165°F (74°C) internally.
Shredding & Velvety Finish
- Transfer cooked chicken breasts to a cutting board (or shred directly in the crockpot using two sturdy forks) into bite-sized shreds, then return the chicken to the bubbling broth.
- Add the cubed softened cream cheese and shredded Monterey Jack directly into the hot chili. Whisk gently until the cheeses completely melt and emulsify into a rich, velvety cream broth.
- Stir in fresh lime juice and simmer uncovered on LOW for 10 to 15 minutes to allow flavors to harmonize. Ladle into wide warm bowls and serve with fresh cilantro, avocado slices, and tortilla chips.
