Prepping & Searing the Chicken
- Pat the chicken thighs completely dry with paper towels on both sides. Season evenly with kosher salt, black pepper, and garlic powder.
- Heat olive oil in a large cast-iron skillet or heavy stainless steel pan over medium-high heat until shimmering.
- Add the chicken thighs in a single layer without crowding. Sear undisturbed for 5 to 6 minutes per side until deep golden brown and nicely crusted. Transfer briefly to a clean plate.
Simmering the Sticky Glaze
- In a measuring cup or small bowl, whisk together the honey, low-sodium soy sauce, minced garlic, apple cider vinegar, grated ginger, red pepper flakes, and sesame oil.
- Reduce skillet heat to medium. Pour the sauce mixture directly into the hot skillet, scraping up any flavorful browned bits from the bottom of the pan with a wooden spoon.
- Return the seared chicken thighs and any resting juices back to the skillet. Simmer uncovered for 4 to 5 minutes, spooning and basting the bubbling glaze continuously over the thighs until the sauce thickens into a glossy, sticky coating and chicken reaches an internal temperature of 165°F (74°C).
Garnishing & Serving
- Remove the skillet from heat and let rest for 2 minutes as the glaze thickens slightly more around the warm chicken.
- Scatter thinly sliced green scallions and toasted sesame seeds generously over top.
- Serve hot over fluffy bowls of steamed jasmine rice with tender broccoli, spooning plenty of extra pan glaze over everything.
