- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In another bowl, beat the softened cream cheese with powdered sugar until smooth.
- Fold in the chopped strawberries and whipped cream into the cream cheese mixture.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Make a small indent in the center of each cookie and fill with the cream cheese and strawberry mixture.
- Optionally, top with whole or sliced strawberries.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
