Ingredients
  

  • 1 cup Butter softened
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 8 oz Cream Cheese softened
  • 1/2 cup Powdered Sugar
  • 1 cup Fresh Strawberries chopped
  • 1 cup Whipped Cream
  • 1 cup Additional Strawberries whole or sliced

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In another bowl, beat the softened cream cheese with powdered sugar until smooth.
  7. Fold in the chopped strawberries and whipped cream into the cream cheese mixture.
  8. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  9. Make a small indent in the center of each cookie and fill with the cream cheese and strawberry mixture.
  10. Optionally, top with whole or sliced strawberries.
  11. Bake for 12-15 minutes or until the edges are lightly golden.
  12. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
