Ingredients

  • 2 pounds fresh strawberries hulled and chopped
  • 1 cup granulated sugar adjust to taste
  • 1 tablespoon lemon juice freshly squeezed
  • 1 packet pectin optional for thicker jam

Method
 

Prepare the Strawberries
  1. Wash and hull the strawberries, then chop them into small pieces.
  2. Place the chopped strawberries in a large pot.
Cook the Jam
  1. Add the sugar and lemon juice to the pot with strawberries.
  2. Cook over medium heat, stirring frequently until the mixture comes to a boil.
  3. If using pectin, add it according to package instructions once boiling.
  4. Continue to boil for about 10-15 minutes until the mixture thickens.
Jar the Jam
  1. Remove the pot from heat and let it cool slightly.
  2. Using a ladle and canning funnel, pour the hot jam into sterilized jars.
  3. Seal the jars and let them cool to room temperature.
