Ingredients
  

Scones
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
Mini Fruit Tarts
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg yolk
  • 1 cup pastry cream store-bought or homemade
  • 1 cup mixed berries for topping
Butter Cookies
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Method
 

Scones
  1. Preheat the oven to 400°F (200°C). In a mixing bowl, whisk together flour, baking powder, and sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Stir in the cream and vanilla until just combined. Turn the dough onto a floured surface and knead gently.
  4. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 15-20 minutes until golden.
Mini Fruit Tarts
  1. In a mixing bowl, combine flour and powdered sugar. Cut in the butter until crumbly. Add egg yolk and mix until dough forms.
  2. Press dough into tartlet pans and bake at 350°F (175°C) for 15 minutes until lightly golden.
  3. Let cool, then fill each tart with pastry cream and top with mixed berries.
Butter Cookies
  1. In a bowl, cream together the butter and sugar until light and fluffy. Mix in vanilla.
  2. Gradually add flour and salt, mixing until dough forms. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll out dough and cut into desired shapes. Bake for 10-12 minutes.
