Ingredients
  

Zucchini Fries
  • 2 medium Zucchini sliced into fries
  • 1 cup Panko breadcrumbs for extra crunch
  • 1/2 cup Grated Parmesan cheese optional for flavor
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 large Eggs beaten
  • 1 tablespoon Olive oil for drizzling

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
  3. Slice the zucchini into fry shapes and dip each piece into the beaten eggs, then coat with the breadcrumb mixture.
Baking
  1. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  2. Drizzle with olive oil and bake for 20-25 minutes or until golden brown and crispy.
  3. Remove from the oven and let cool slightly before serving.
